These cheese and pebre-topped boerewors by @thesmokinelk are just the thing to get your sausage fix while you watch the fireworks 🔥
 
Ingredients:
 
Sausage wheel ingredients:
 
1 boerewors sausage
Grated cheese of your choice
 
Pebre ingredients:
 
½ onion, finely diced
1 jalapeno, finely diced
1 large garlic clove, finely diced
1 tomato, de-seeded and finely chopped
1 bunch of coriander, finely chopped
3 tbsp olive oil
2 tbsp red wine vinegar
Salt and pepper, to taste

Method:

Make the pebre by combining all of the ingredients in a bowl.
I like to use my Kamado Joe Kettle Joe to cook this directly over the coals at around 180 °C. If you’re using a standard BBQ, you will want to cook it over the coals for just a few minutes. Then, finish it off on the indirect side of the BBQ until it hits an internal temperature of at least 73 °C on your Thermapen.
Once the sausage wheel has reached temperature, top it with plenty of grated cheese!
Once the cheese is melted, remove it and let it rest for 5-10 minutes. You can then top it with the pebre, slice, and add to cocktail sticks or small skewers. This gives you little cheesy sausage lollipops!

  • BBQ fish levelled up with @thenotecook's Whole BBQ Sea Bass in foil! 😋🔥 

Tender, juicy, and perfect for sharing – the meat just melts off the bone. Who’s ready to feast? 🐟✨

Ingredients:

1 sea bass
4 sprigs of lemon thyme	
1/2 lemon, cut into wedges
80g salted butter
100ml dry white wine
Sea salt flakes, to finish

Method:

1. Set your BBQ up for 200 °C indirect cooking.
2. Place the fish onto a piece of foil and stuff the cavity with the lemon, butter and herbs.
3. Add the white wine to the foil parcel before wrapping. This will capture all of the moisture in the fish and prevent it from drying out.
4. Cook your fish away from the coals. This stops it from cooking unevenly.
5. Cook until the fish reads 60 °C on your Thermapen. It's really important to probe the whole fish because it has different thicknesses which will cook at different rates.
6. Serve with some nice crusty bread, just like in the Mediterranean!

Ingredients:
 
200g golden caster sugar
70g liquid glucose
40g Tesco runny honey
3 tablespoons water
10g of bicarbonate of soda
A few drops of vanilla essence
Sprinkle of salt (to finish)
 
Method:
 
1. Put all the liquids in a pan (sugar, honey, water and liquid glucose, vanilla essence)
2. Using your Thermapen, bring the liquid up to 165°c
3. Take off the heat and pour in the bicarbonate of soda and stir
4. Pour out onto a baking sheet lined with greaseproof paper
5. Leave to harden and sprinkle with salt
6. Break into pieces and enjoy :)
  • Who loved Bread Week on Bake Off? 🍞 Some amazing creations but a few fails that could’ve been saved by cooking to the right temp! 🔥 Here’s our fool proof cinnamon bun recipe—just follow the steps and use your Thermapen for perfect results every time. 
 
Dough Ingredients:

400g plain flour
50g sugar
1 tsp ground cardamom
7g instant yeast
½ tsp salt
240ml milk
56g unsalted butter

Filling:

Room temp butter (approx 20°C)
75g light brown sugar
1 tbsp cinnamon

Finish:

1 egg for glazing
Pearl sugar & flaked almonds

Method:
 
Preheat the oven to 170°C. 
 
Place all of the dry ingredients into a mixer. 
 
Warm the milk and melt the butter in the milk. Allow it to cool slightly so it’s lukewarm. Take a temperature reading using your Thermapen. The ideal temperature is 26°C. 
 
Add the milk and butter to the dry ingredients and mix on slow speed for around 8 minutes.
 
Take the dough from the mixer and place in an oiled bowl. Cover and leave to prove until doubled in size. 
 
Place the ingredients for the filling into a bowl and mix with a fork to create a smooth paste. Set aside at room temperature. 
 
Turn the dough onto a floured worktop and roll into a square measuring 35cm x 35cm. 
 
Spread the filling evenly over the surface of the dough with a pallet knife. Fold into thirds, like a letter, and roll out again to measure 35cm x 20cm. Cut into 2cm strips, approximately 20cm long. 
 
Twist the strips by gently holding each end and twisting and pulling gently until almost doubled in length. Wrap the dough twice around two fingers and knot the dough. Place the twisted dough, with the loose facing piece downwards, on a tray with silicone paper. Repeat with the remaining strips. Cover and leave for a second prove at room temperature. 
 
When ready, gently glaze each bun and sprinkle with pearl sugar and flaked almonds. 
 
Place in the oven until they have reached an internal temperature of 87°C.
